Orange Sorbet

Adapted from "Joy of Cooking"
Orange Sorbet

A perfect refreshing dessert for hot summer. Aren't they pretty?

Ingredients:

2 cup fresh orange juice
1 cup sugar
zest of 1 medium organic orange, removed in strips
1 tbsp fresh lemon juice

Method:
Orange Sorbet

1) Combine 1/2 cup orange juice, sugar, orange zest in a small saucepan. Bring just to a simmer over medium heat, stirring occasionally to dissolve the sugar.
2) Remove the pan from the heat, cover, and steep until the flavor strong, 15 minutes. Strain into a medium bowl. Stir in the rest of orange juice, lemon juice.
3) Refrigerate until cold. Taste and add more sugar if needed, stirring until the sugar is completely dissolved, 2~3 minutes.
4) Pour into an ice cream maker and freeze as directed.

By hand: Pour the mixture into a shallow freezerproof container, freeze for 4 hours, until it is mushy. Then scoop the sorbet into a food processor and beat it until smooth. Return the mixture to the freezer for 4 hours.
